A Modern Twist

While of course, adrak-waali chai (ginger tea) and piyaz pakoda (onion fritters) are one of our favourite combinations, a small experiment has lead to a flavourful duet. Give a miss to the milk and sugar, instead steep cinnamon sticks in dark rum and then add that two black tea – it is heady. As for pakodas try our fritters with jalapeños, cheese and smoked pineapple – should we say any more?
